Job Description:

We are looking for an experienced Sous Chef or Executive Sous Chef to take on a challenging and rewarding leadership role. We desire a candidate that is ready to step forward in their professional development and take ownership of an up and coming restaurant. Candidates will play a critical role in supporting the development of the menu, research and development, training and staff development, and sourcing and at Fiorella.
Applicants must have management experience, possess a strong sense of urgency, direct communication skills, along with an ability to coach and effectively manage teams in a growth-oriented environment. Candidates will play a critical role in supporting the development of the menu, and sourcing product along with leading and training our kitchen team at Fiorella. If you love Italian food, pizza, wood-fired cooking and working with great products and a passionate team, we are the place for you.
JOB DUTIES:

  • Menu and Product Sourcing Research
  • Executing and documenting new menu items from start to finish. This includes preparation of ingredients, butchery of proteins, cooking and plating of dishes.
  • Development of staff training and development plans
  • Support in managing kitchen employees and including training, coaching and development
  • Budget Execution
  • Inventory control, food & labor costing, and product sourcing
  • Food safety and sanitation controls
  • Exceptional communication and supervisory skillsDESIRED SKILLS:
    • Must have a strong foundation in culinary technique with a fundamental understanding of how to manage a daily changing, market-driven menu
    • 3+ year of related Italian Cooking experience. Wood-fired cooking a plus
    • Dough Making, Pasta Making, Enforcement Of Safety / Sanitation Standards, Equipment Maintenance, Expediting, Inventory, Kitchen Cleaning/Sanitation, Kitchen management, Meat Butchery, Meat Cookery, Pasta Cooking, Scheduling,. P&L Management, Budgeting
    • Experience with back of house administrative and managerial duties a must
    • Proficient in Google Suite, Microsoft Word and Excel
